The oil is water extracted from the avocado fruit without the use of harmful chemicals and solvents, much the same way olive oil is made. Marianne’s Avocado Oil Product Details

MARIANNE’S LEMON GARLIC AND CILANTRO MARINADE
Makes 1 cup marinade
(for marinating meats or seafood)
1 cup Marianne’s Harvest Brands™ Marianne’s Avocado Oil
Juice and zest of 2 lemons
3 cloves garlic
1 bunch fresh cilantro
3 springs thyme leaves
2 teaspoons sea salt
1 teaspoon fresh ground black pepper
Blend all ingredients in a blender until smooth. Divide mixture in half. Marinate meat in half the mixture for several hours. Grill until done. When meat or veggies are cooked through, remove from the grill and brush with remaining marinade just before serving. Store leftovers in an airtight container in the fridge.

Yield: Makes about 1 cup
1 large egg yolk at room temperature 30 min.
½ teaspoon of your favorite Dijon mustard
¾ cup Marianne’s Harvest Brands™ Avocado Oil
1 teaspoon cider vinegar
1½ teaspoons fresh lemon juice
¼ teaspoon salt
Whisk together yolk, mustard, and salt until well combined. Add about ¼ cup oil drop by drop, whisking constantly until mixture begins to thicken. Whisk in vinegar and lemon juice. Add remaining oil in a very slow, thin stream, whisking constantly until well blended.
If it appears that oil is not being incorporated, stop adding oil and whisk mixture vigorously until smooth. Then continue adding oil. Whisk in salt to taste. Chill, surface covered with plastic wrap until ready to use.
