  • If refrigerated, let the potato warm gradually to room temperature before cooking to avoid discoloration. When stored in temperatures lower than 50°F, potato’s starch conveerts to sugar which can result in discoloration. 
  • Preforated plastic bags and paper bags tend to offer the best environment for extending a potatoes shelf life.
  • No need to wash potatoes before storing because dampness can promote early spoilage.
